Southwest Chicken Soup




This is one of my favorite quick meals. It comes together in under 15 minutes. I love it because it isn't just a soup I save for the fall. It's wonderful in the summer with fresh avocado.

Rachel's Southwestern Chicken Soup
  • Costco Rotisserie Chicken - shredded (boiled chicken would also work, or you could leave the chicken out.
  • 5-6 cups GF Chicken Stock
  • 1 8oz can tomato sauce
  • 1 can pinto beans (rinsed)
  • 1 can black beans (rinsed)
  • 1 can corn (drained)

Add to taste:

  • salt
  • pepper
  • cumin
  • garlic powder (or cloves)
  • onion powder (or real onion)
  • oregano

You can really add anything you want to the soup. I'm weird, I don't like tomatoes, but I like tomato sauce. The same goes for the onions. I don't like cilantro, so I just added it for the picture. This time I added crema, cotija (neither are dairy free), & the leftover Andean Dream Noodles from Dinner on Monday. Other times I've added chunks of avocado & cooked rice. It's a really versatile soup and it re-heats wonderfully!

Sopes with Refried Beans, Quinoa & Ground Turkey, Warm Corn Salad, Pico, and Avocado



Yuuupp. Check out those noms. 

I discovered sopes last week. Sopes are a wonderful base for just about any combination of meats and vegetables. They look like a thick tortilla and are made from a circle of fried masa of ground maize with pinched sides. 

I topped mine with the following layers:
  • Refried Beans
  • A mix ground turkey & quinoa (with taco seasoning)

  • Homemade Pico
  • Avocado

So filling & deliciously gluten free!

Pasta with Butternut Sauce, Steamed Broccoli, and Breaded Chicken

I found this recipe for Pasta with Butternut Sauce, Spicy Sausage, & Baby Spinach on SkinnyTaste's Pinterest. It looked great, however I'm a picky eater. I decided to modify the recipe to go with what I liked and also what I had in the fridge. I decided instead of sausage, which I didn't have, to sub a GF breaded chicken. I also subbed broccoli for spinach.


Ingredients:

For the Pasta & Sauce:
  • 1 lb butternut squash, peeled and diced
  • 1 tbsp light butter
  • 10 oz gluten free pasta of your choice. (I used Andean Dream Quinoa Pasta Fusilli)
  • 1/4 cup shallots, minced
  • 3 cloves garlic, minced
  • 2 cups broccoli, steamed
  • 2 tbsp fresh shaved parmesan cheese
  • kosher salt and freshly ground black pepper, to taste
For the Chicken
  • 4 Chicken tenderloins
  • Corn Chex
  • Onion Powder
  • Garlic Powder
  • 1 Egg

I've been looking for a good GF breadcrumb. All the ones I've looked at are a little too expensive for something I feel like I could make at home. Rice and Corn Chex are both GF, so I used the food processor to chop up some Corn Chex tossed in some garlic & onion powder & voila! Homemade GF breadcrumbs!

Tada! Final Product!

I followed SkinnyTaste's cooking instructions for the rest. The breaded chicken may have been a little off with the pasta dish, but overall, it still tasted good. 

Gluten Free Breakfast from Heaven!

I've been living gluten free on and off for over a year now. I've been tested and I don't have Celiac Disease or Gluten Intolerance. The "gluten gut" I get after I eat bread disagrees with the test results.


I've found that eliminating most* gluten & dairy from my diet has helped immensely! I just feel better. 


That deliciousness you see above is a GF breakfast from heaven! It's a homemade GF yogurt parfait. I got the idea from Marlow at Gluten Hates Me.


GF Yogurt Parfait:



  • 1/2 Udi's Gluten Free Double Vanilla Muffin
  • 1/2 Cup Greek Gods Honey Vanilla Yogurt
  • 4 medium strawberries


Only 271 calories according to MyFitnessPal!

I look forward to posting my attempts at gluten free cooking, fitness goals, and of course my dogs. :)







*I say most gluten because who am I to turn down a warm cookie from Tiff's Treats? There are just some times it is impossible to resist a warm baked good. Even if my stomach does disagree.
