I discovered sopes last week. Sopes are a wonderful base for just about any combination of meats and vegetables. They look like a thick tortilla and are made from a circle of fried masa of ground maize with pinched sides.
I topped mine with the following layers:
- Refried Beans
- A mix ground turkey & quinoa (with taco seasoning)
- Skinny Taste's Warm Mexican Corn Salad - http://www.skinnytaste.com/2012/06/warm-mexican-corn-salad.html
- Homemade Pico
- Avocado
So filling & deliciously gluten free!
